They combine young, unfermented apple juice and aged Calvados to produce the equivalent of a vin mutage, a sweet, fortified drink. These are usually drunk as an aperitif and as an alternative to something like a glass of Lillet, Pineau de Charentes or Port. This example uses juice from around 30 heirloom, cider apple varieties and a calvados which has been aged for 4 years prior to blending.
